16 gauge is sufficient for shorter runs as strand count is less important the overall size . Strand count will affect the flexibility of the cable. For longer runs 14 or 12 gauge should be used

Can this be used for two rear speakers, in a surround system? The white covering would need to be cut off so two of the wires go to one speaker and of course the other two wires go to the other speaker. Will this cause any interference since the white covering would be cut off for about 10 feet, at the speakers in the ceiling.

I used this wire for exactly that purpose for a pair of outdoor speakers (Klipsch CP-6, also purchased from Crutchfield). After connecting the left speaker, I removed the outer jacket & ran the remaining pair of wires approximately 20 feet to where the right speaker was installed. It worked perfectly & we enjoy music on the back deck!

Removing the white covering will not in any way change what you hear. It is not shielding. Think of it as the thing that makes pulling the wire easier. The inner wires have colored insulation on them which is to keep bare metal touching each other. You will be fine using it as you describe.
